
You don't have to ask me twice if I like pecans. The answer isn't yes, it's YES! I like them plain, candied, in waffles, cookies, cakes, ice cream, candy, and those fabulous pecan pies.
Back in December my mouth began watering for some Butter Tarts, when I found we had run out of pecans. It was late in the year and there were not any nuts left in the places where I usually gather them. However, I was fortunate enough to locate a tree that had been left untended by both humans and squirrels. But, were the nuts still good after being on the ground for so long? After spending a couple afternoons gathering them I was anxious to find out.
It is said that pecans will keep in the shell for about 3 months, and these were still good. After they are shelled, they will go rancid rather quickly unless they are refrigerated or frozen. If there is another way to preserve them, I would appreciate information on how to do that.
Oh yes! The Butter Tarts were delicious.
